Launch the Animaze app and click on the Avatars icon (it's the first icon, on the left UI)

From here you can browse either through the avatars you already own in My Avatars, buy new ones in the Shop section or build your own character in the Persona section.

Once you have found the avatar you want to change to, just click on it and it will start to load on your main screen. From here, you can take a moment to go through the avatar’s customizations like textures and colors. Once you’re happy with how it looks, hit the Save button!
